American Kale Chutney brought together the familiar flavours of Tamil Nadu and one of North America’s favourite superfoods.

Earthy kale was transformed into a bold, distinctly South Indian chutney that worked just as well with dosa and paratha as it did with sandwiches, grills and everyday snacks.

No chopping. No cooking. No washing up.

Just Peel. Pour. Chutnefy.

Kale had become one of North America’s most recognised superfoods, but it was still largely consumed in salads, smoothies and health-focused meals.

We believed chutney could make kale more flavourful, familiar and easier to enjoy. By combining it with the recipes and flavours of Tamil Nadu, we hoped to bring together modern nutrition and traditional Indian food culture.

It was our attempt to answer a simple question:

What if a superfood didn’t have to taste like health food?

Kale proved expensive to source and surprisingly demanding to clean and prepare at scale.

More importantly, the market was not quite ready to embrace North America’s favourite green in chutney form.

We may have been a little early.

The chutney was eventually retired, but the experiment remains an important part of the Chutnefy story: taking traditional chutney formats into unexpected new territory.

Curry Leaf Chutney | South Style Special

A household classic, with no two recipes quite alike.

Curry Leaf Chutney is made in homes across South India, but it is rarely made the same way twice.

Every household has its own version, shaped by family recipes, local ingredients and personal preferences. Some are nuttier, some tangier, some spicier, and some carry a stronger hint of bitterness.

Our version brought together the distinctive citrusy, earthy aroma of curry leaves with fresh ingredients and spices to create a balanced chutney that was tangy, spicy and gently bitter.

Just Peel. Pour. Chutnefy.

Curry Leaf Chutney is one of those recipes that often lives within families rather than in restaurants or packaged-food aisles.

Because every household makes it differently, there is no single definitive version. We wanted to create our own interpretation of this deeply familiar South Indian recipe and make it accessible beyond the homes in which it is usually prepared.

It was also an opportunity to celebrate how chutneys evolve through families, regions and generations.

Curry Leaf Chutney developed a loyal following among people who were already familiar with the recipe, but its distinctive bitterness made it a more niche proposition.

The flavour felt deeply familiar to some consumers, particularly in South India, but was less readily embraced by those who were not used to curry leaves being the central flavour.

It entered the Vault because its unmistakable character inspired strong affection among a smaller audience, but did not appeal broadly enough to sustain it as part of the permanent range.

Mushroom & Black Garlic Chutney | Chettinad Style

Chettinad heat meets deep, earthy richness.

Mushroom & Black Garlic Chutney was a Chettinad-inspired flavour bomb that combined the savoury earthiness of mushrooms with the rich, caramelised intensity of black garlic.

Bold, layered and unlike anything normally found in the chutney aisle, it took a familiar Indian accompaniment into entirely new territory.

No chopping. No cooking. No washing up.

Just Peel. Pour. Chutnefy.

We wanted to explore whether chutney could move beyond familiar flavour combinations and enter a richer, more contemporary space.

Mushrooms brought depth and umami, while black garlic added sweetness, complexity and a flavour that was still relatively unexplored in Indian packaged food.

Combined with a Chettinad-style spice profile, the result felt adventurous while remaining rooted in Indian cooking.

It became a crowd favourite and continues to be one of the products we are most frequently asked about. Vault fact: Its launch also inspired one of the most entertaining pieces of content we have created as a brand.

The same complexity that made the chutney special also made it extremely difficult to produce.

The recipe required a long list of real ingredients, substantial preparation and several labour-intensive production stages. Black garlic, in particular, was exceptionally expensive to source at the quality the recipe required.

As the ingredient and production costs accumulated, it became impossible to offer the product at a price that worked for both the business and the consumer.

It entered the Vault not because people stopped loving it, but because making it properly came at a cost the market could not reasonably support.

Bell Pepper Chutney

Mild, creamy and made to go with almost anything.

Bell Pepper Chutney combined a smooth, creamy texture with mild spice and a gentle hint of sweetness.

Colourful, approachable and easy to pair, it worked just as well with breakfast as it did as a dip, spread or accompaniment.

Scoop it up with dosa or idli, spread it over rotis and sandwiches, or serve it alongside crackers, chips and snacks.

We wanted to create a chutney that was milder and more approachable than many traditional South Indian varieties.

Bell peppers offered natural sweetness, colour and a creamy texture, making them a strong base for a chutney that could move easily across Indian meals, snacks and more contemporary eating occasions.

The idea was to create a versatile chutney for people who wanted plenty of flavour without too much heat.

Bell Pepper Chutney was mild, creamy and extremely versatile. But that versatility also made it difficult to position clearly.

It sat somewhere between a chutney, dip and spread without strongly owning any one occasion.

While people enjoyed the flavour, it did not have the distinct identity needed to earn a permanent place in the range.

Beetroot Chutney | Udupi Inspired Special

An un’beet’able take on a traditional chutney.

Beetroot Chutney brought the rich colour and earthy sweetness of fresh beetroot together with the familiar ingredients and flavours of a traditional Udupi-style chutney.

Mildly spicy, slightly sweet and impossible to miss on the plate, it was created to bring something genuinely different to breakfast and snack time.

Most traditional chutneys rely on familiar ingredients such as coconut, tomato, mint or coriander.

We wanted to see whether beetroot, with its natural colour, sweetness and earthiness, could become the centre of a distinctly South Indian chutney.

The idea was to create something visually unexpected while keeping the flavour rooted in a familiar Udupi-style recipe.

Beetroot gave the chutney an unforgettable colour, but its naturally sweet and earthy flavour made it more polarising than our traditional varieties.

People were intrigued enough to try it, but for many, it remained an occasional novelty rather than an everyday chutney.

It entered the Vault because curiosity did not consistently translate into repeat consumption.

Pumpkin (Kaddu) Chutney | No Onion, No Garlic

A familiar Jain ingredient, reimagined as chutney.

Pumpkin Chutney brought together the natural creaminess and gentle sweetness of pumpkin with aromatic spices and familiar Indian flavours.

Made without onion or garlic, it was created for Jain consumers and for occasions when dietary restrictions become especially important, including fasting periods and festivals.

Pumpkin is a familiar and widely used ingredient in Jain cuisine, and by many others particularly during fasting periods, festivals and other occasions when onion, garlic and certain vegetables are avoided.

We saw an opportunity to take an ingredient already trusted within the community and present it in a new, convenient format.

Rather than adapting an existing chutney by simply removing ingredients, we built the recipe around pumpkin from the start, using its natural body, sweetness and ability to carry spices.

The product had a clear cultural and dietary relevance, but its strongest appeal was concentrated around a specific audience and particular occasions.

Outside those occasions, pumpkin chutney was not yet an instinctive everyday choice for most consumers, which limited repeat demand across the year.

It entered the Vault because the idea was meaningful and well suited to its intended community, but the demand was too seasonal and specialised to sustain it as a permanent part of the range.

Mint Chutney | North Indian Style

The chutney that travelled everywhere.

Mint chutney is one of the few Indian accompaniments that has transcended regions, cuisines and borders. It is equally at home beside samosas, chaats and kebabs as it is inside sandwiches, wraps and grilled dishes. Over time, it has also become one of the most widely recognised Indian chutneys outside the country, finding a place in restaurants, kitchens and meals across the West.

Fresh, sharp and endlessly versatile, our Mint Chutney was designed to go with almost anything. Dip it. Scoop it. Spread it.

Mint Chutney presented an important product-development challenge.

Because the flavour was already so familiar, consumers knew exactly what they expected: a bright green colour, a fresh aroma and the unmistakable sharpness of freshly prepared mint.

We wanted to see whether we could deliver that experience in the Chutnefy format, using real ingredients and without depending on artificial colours, flavours or preservatives

This version was not retired because Mint Chutney did not belong in the range. It was retired because we developed a better one.

Further work on the recipe resulted in a brighter colour, fresher flavour and a taste much closer to what we had originally envisioned.

The first version entered the Vault and made way for its successor, the Green (Hari) Chutney; a reminder that product development does not always end at launch.

Chettinad Chutney | South Style

Many ingredients. One bold chutney.

Chettinad Chutney began with a familiar South Indian household recipe commonly known as kalavai chutney or kadamba chutney.

Much like the words suggest, it was a mixture of ingredients, flavours and textures brought together into one rich accompaniment. Spicy, tangy and nutty, it carried the depth and complexity associated with a recipe in which no single ingredient had to do all the work.

Enjoy it with dosa, idli and vada, pair it with paratha or naan, or serve it as a bold dip alongside snacks.

Kalavai and kadamba chutneys are part of a style of household cooking in which several available ingredients are combined to create something greater than the sum of their parts.

We were drawn to the idea of a chutney that did not depend on one hero ingredient. Instead, its character came from the balance between roasted ingredients, spices, tang and heat.

Our interpretation leaned towards the bold, aromatic flavours associated with Chettinad cuisine, which eventually led us to launch it as Chettinad Chutney.

The name may have moved the product away from the familiar recipe that originally inspired it.

By calling it Chettinad Chutney, we gave consumers a broad regional reference but did not clearly explain that it was our interpretation of the commonly known kalavai or kadamba chutney.

As a result, people understood the word “Chettinad,” but not necessarily what the product was, what went into it or how it differed from the other spicy chutneys in the range.

It entered the Vault because a complex chutney needed a clearer and more specific story than the one we gave it.

Tomato Chutney (Jain) | No Onion, No Garlic

A familiar tomato thokku, made without onion or garlic.

Tomato thokku made without onion or garlic is a common staple in many Indian households, particularly among families that follow a no-onion, no-garlic food preference.

Our version brought together the tang of tomatoes with a lingering spicy finish, creating a familiar, versatile accompaniment that could be enjoyed across meals.

A no-onion, no-garlic tomato thokku is not simply a substitute for regular tomato chutney. It is a familiar recipe in its own right and an everyday staple in many households.

We wanted to make that familiar flavour more convenient, while retaining the tang, spice and depth people expected from a traditional homemade thokku.

The product was relevant not only to Jain consumers, but also to families that avoided onion and garlic for religious, dietary or personal reasons, either throughout the year or during fasting periods and festivals.

Although the recipe had relevance across a much wider no-onion, no-garlic audience, we launched it as Tomato Chutney – Jain.

In hindsight, the name may have made a familiar household staple appear like a product created exclusively for one community. Consumers who regularly ate no-onion, no-garlic food, but did not identify specifically with Jain cuisine, may not have realised that the product was equally intended for them.

It entered the Vault partly because its positioning narrowed the audience for a recipe that was, in reality, much more widely understood and enjoyed.

It remains an important lesson from the Chutnefy journey: sometimes a product’s name can make its market smaller than the product itself.
