How is this different from other instant sambars?

Sambar is cooked the traditional way, then gently freeze-dried to remove moisture while retaining 100% of the flavour and up to 95% of the nutrition. Unlike other instant sambars that rely heavily on preservatives, Chutnefy stays shelf-stable as a light, dry powder. Add water, and it comes alive again, tasting just as fresh as the day it was made.

This sambar does not contain

Added preservatives, artificial colours or flavours, thickeners or fillers.
Just real ingredients, cooked traditionally and preserved thoughtfully.

Do I need to temper the sambar after mixing?

No and that’s the best part. The tempering is already built in and preserved through freeze-drying. Once you mix it, the flavour blooms exactly as intended. No extra pans, no extra oil, no finishing steps. Just chutney, done right.

Tiffin Sambar

The Backstory

Sambar is at the heart of South Indian cooking. A slow-simmered lentil stew shaped by spice, season, and soil. Built on carefully layered spice blends, vegetables, and tamarind, it reflects a region where trade routes, farming traditions, and home kitchens have long crossed paths. Every household, hotel, and community carries its own version, guided by inherited masalas and quiet adjustments passed down like family lore. It’s this depth that makes sambhar more than a dish, it’s what anchors the meal. .....

From this shared foundation emerge two beloved styles. Hotel Sambar is the savoury version found in South Indian eateries. Bold with spices, vegetables, and tempering and designed to pair beautifully with crisp dosas and fluffy idlis. Tiffin Sambar, on the other hand, is lighter and gentler, as served across Tamil Nadu and Karnataka tiffin centers. That hint of jaggery sweetness balances tamarind and spice, making it easy to ladle, soak, and satisfy every bite.

Sambar adapts effortlessly, completing the meal every time, whether it’s poured generously at a bustling hotel counter or served warm at a quiet breakfast table.
